I''ve said before that Rombauer Chardonnay is my favorite. It's such a classic Napa white. Oats for 36 months in French oak and has tastes of layered butter and caramel.
Full malolactic-acid or ML means they converted the lactic acid to a full-bodied milky-thickness/texture on the tongue. A creamy smooth texture is the result.
The wine is aged for 36-month in French oak providing an exchange that takes the edge of acids and replaces it with vanilla and caramel flavors.
The entire bottle continues to provide lovely flavors as it warms and opens. I prefer it slightly chilled vs. fully chilled in order to let these flavors and aromas open fully.
A very unique father-son adventure with 26 wines. One could visit just here in Woodinville and not need to go anywhere else with this number of wines. Many wines are sourced from their estate property called Stillwater, and the other uniquely from properties where Mr Mike Januik developed a relationship as the winemaker at Chateau Ste Michelle. After retiring, he built his own winery (tasting room right across the street from Chateau Ste Michelle) with his son Andrew. Many of the wines are rated 90 points. Amazing experience here because it was not just wine it was educational because we got to meet the winemaker, and our wine tasting person was an expert as well.This place was one of the most award-winning in the reds which causes to come here. Lovely facility with a restaurant so we got to have lunch too. Never had bacon and crusted dates infused with cheese and they were amazing.The theme was literature, with wine name such as chapters, protagonist, conflict.One of the things we learned us why 2015 was a great year and white merlot and cab taste different in Washington versus a thousand miles away in Napa.
